The Flavour College project introduced innovative dining concepts for deep space exploration, aiming to address the issue of sensory repetition experienced by astronauts. Utilizing spherification technology, food could be transformed into diverse sizes, shapes, and textures. The project incorporated three robotic arms capable of seamless coordination. Food with flavours were initiated on Earth before being cooked in space.

Preperation.

Step 1.Step 2.

Why it’s important to programme food in space?  In deep space exploration, however,  capsule habitats can not provide sufficient stimulate for astronauts, which might cause sensory monotony for astronaut.

This projects induces novel food supply system ranging from packing to cooking, to provide variety taste for astronaut and saves the cost for transportation.

How it works? Preperation. In space, water ballon of sodium alginate solution would not be pull down by gravity. Instead, it will adhere to the near surfaces and form a sphere.

Step 1.
Injecting different drinks that contains calcium ions into the water ballon of sodium alginate solution would results in gil membrane between the two solutions.
This membrane will cover the drinks and form continuous line which is the drinks covered by mambrane.

Step 2.
If programe the positions, flow, and velocity of each fluid, they could joint each others.
With these joints, different shapes of food could be produced.

Weaving experiments

Pumping drinks with calcium ions into the water of sodium alginate solution while change positions, flow, and velocity, different shapes of edible lines could be formed.
Due to the limitation of gravity, the final results could be different.

Protein film making experiments

Instead of forming protein packages that encapsule flavor substances inside it, producing protein films that contains substances is favorable. By applying this kind of protein films to space, they could be used like the process of roll film, which is more convinient than packages for machines.

STAGE 1. Experiment on ratios of Whey Protein and Glycerin

STAGE 2. Experiment on heating temperatures and duration

STAGE 3. Experiment on different flavours

Building

Given the flexibility of the robotic arm, there are still a lot to be modfied to make sure that this robotic arm could be programmed easily and also qualify this job.
